Butternut Squash Soup

1 medium onion - diced
1 Tbs chopped fresh sage
1 medium butternut squash - peeled and diced
5 cups chicken broth
1/3 cup parmesan cheese (optional)
- Saute onion and sage in a pot add chicken broth and chopped butternut squash - cook until squash is soft.
- place soup in blender (a few cups at a time) blend until smooth.
- sprinkle with parmesan cheese
enjoy.
