This is a great recipe because it can be easily adapted to individual tastes or moods!
2 cups mixed veggies of your choice
(my favorite combination is cauliflower, broccoli, zucchini and mushrooms)
4.5 oz chopped chicken breast or ham
a few slices of pepperoni
1/4 cup of low fat mozzarella cheese shredded
pasta or pizza sauce
Clean and chop the veggies and place them in a casserole dish. Toss in the meat of your choice and pepperoni slices. Sprinkle the cheese over the top and bake at 375 for about 20 minutes. While it’s baking heat your favorite pizza or pasta sauce. The casserole is finished when the cheese is bubbly (like a pizza) and the veggies are soft, but not mushy. Serve with the sauce.
